can someone briefly explain me how default profiles work? I do have a
hostgroup associated with OS, architecture and medium but my default
PXELinux template never renders me a single entry for manual
provisioning.

You also need the template associated to a host group and environment on
the Associations tab.

Now I am getting:
There was an error rendering the Unnamed template: undefined method
`token' for #<Hostgroup:0x0000000afbf3d8>
When I search our community-templates, I don't see "token" methods,
except those in PXE-related templates. But I am trying to render a
kickstart.
Since there is no stacktrace and our errors coming out of the
renderer are not that useful, I struggle locating the root cause.
Any tips?

AFAIR its generated by using foreman_url helper.
