Is CentOS 7 a supported installation method for the manual method of
installing katello? (http://www.katello.org/docs/installation/index.html)
The katello-deploy method does support it so I'm wondering what the
difference is which would cause this gap in support.

If CentOS 7 is supported in the manual method, can the documentation be
updated to reflect this?

CentOS 7 is supported if you follow the section on EL7 further down in the
installation docs. I will update the docs to specifically enumerate CentOS
7 as well.
