I am not new to foreman but in the past when I looked at Katello things
seems to be far too confusing. I have now swung back around to take another
look at Katello and I see that Foreman and Katello are kinda integrated.
Is there a how to on getting the entire environment setup?
Are there any tips for setting this up for a Production deployment?
My current environment is not complicated but the margin for failure if
very small (outages cost real money).

If you mean things like HA, replication, etc… no resources that I know of,
it gets a bit more complicated than just Foreman because there's mongodb
involved (Pulp uses it). I'd suggest setting up a small lab to play
around with different configurations, test consistency… before going to
production in a sensitive environment like yours.
