We have PE currently deployed and would like to integrate Foreman into our existing deployment.
I can find very little documentation on how to complete that. Has anyone been able to successfully integrate, and have the steps they followed available? Even basic integration steps would be helpful.

I have no practical experience with it, but there is puppetlabs/satellite_pe_tools · Configures reports and inventory data to be sent to Satellite 6 · Puppet Forge for the integration. As it is for Satellite, it should run fine with Katello. Foreman could require some adjustments in the Workflow like for the certificates.
