I know I can manually write my own repo file on the client pointing to
katello, but this is not my preffered way as I have to do it manually for
each Product.

Currently subscription manager doesn't support pointing to multiple
sources. You'd need to sync all content locally or manage another repo file
through something like Puppet or manually.
